Homemade Zebra Cakes (vegan + gluten-free)

Heads up! This publish goes to be stuffed with fluffy/creamy/candy layers and really very stuffed with nostalgia. I don’t learn about your childhood, however zebra truffles have been a favourite occasional deal with of mine and creating this recipe introduced again all of the completely satisfied lunchbox unzipping reminiscences. We’re in fact doing issues a smidge totally different than Little Debbie did, however I promise they’re related sufficient to nonetheless be deliciously reminiscent.

How To Make Copycat Zebra Desserts

There are 4 parts to the zebra cake: vanilla cake, vanilla cream filling, white chocolate coating, darkish chocolate drizzle. This recipe is sort of straightforward (and fairly enjoyable to assemble I believe!), however there are fairly just a few steps…

Vegan Grain-Free Vanilla Cake Recipe

We’re already switching issues up from the packaged unique with a vegan cake recipe, however I made a decision to go all in and make it gluten and grain-free too. The cake batter is loosely based mostly on these Chai Cupcakes that I am keen on for his or her extremely fluffy texture, as a result of zebra truffles deserve a fluffy cake base with a yummy crumb texture. You will have…

  • almond milk (or any non-dairy milk)
  • apple cider vinegar
  • coconut flour
  • cassava flour
  • cane sugar (I didn’t use coconut sugar for colour functions)
  • maple syrup or agave
  • coconut oil
  • baking powder, salt, and vanilla

To make these mini truffles simply two layers, it really works finest to bake the cake in a really skinny layer after which use a cookie cutter to chop out good sized circles. I used 1 / 4 sheet pan, which is about 9×13 inches, however an analogous sized casserole dish would work too. Simply you’ll want to line with parchment paper for simple elimination, and chill your cake earlier than chopping into circles as will probably be much less fragile and simpler to stack/coat that manner.

Dairy-Free Fluffy Cream Filling

I tried to make a marshmallow filling, however whether or not you go the aquafaba or store-bought vegan marshmallow route it obtained to be too difficult and time consuming. I went with a easy dairy-free vanilla buttercream as an alternative, and it was the proper scrumptious choice. I do advocate a piping bag (or only a ziplock with one nook lower off!) for the best swirling and cake-stacking.

White Chocolate Coating

It wouldn’t be a zebra cake with out that creamy white coating, and the best dairy-free possibility is vegan white chocolate chips. Melted and thinned out with just a little coconut oil to a better cake coating consistency, then spooned and unfold on all sides of your cake stacks. There isn’t any secret right here, this step goes to be a bit messy.

Darkish Chocolate SunButter Stripes

And that is the place my favourite ingredient is available in and creates the traditional chocolate zebra stripes: Chocolate SunButter! You don’t want a lot, just some tablespoons, so their on-the-go pouches work completely right here. You may drizzle straight on the truffles or once more skinny it out with a contact of coconut oil for simpler drizzling. The flavour is ideal, and in contrast to plain ol’ melted chocolate it hardens to this simply barely mushy, ganache-like glisten!
